A gorgeous recipe by one of our favourite chefs from one of our favourite (if not the favourite!) restaurants ever… Courgette Hummus by Anita of La-Petite Bouchée! We absolutely love it there, incredible food, great setting, we cannot recommend enough. In their own words: “We serve simple yet hugely flavoursome, French cuisine using only the finest ingredients from Devon’s bountiful larder.”… What’s not to love?! Check out their menu here! Anyways, on with the recipe! We’ve given it a blast and it did not disappoint 🙂 Ingredients ▪ 3 medium courgettes, roughly chopped ▪ 60 ml extra virgin olive oil ▪ 120 ml lemon juice ▪ 120 ml tahini ▪ A large pinch of sea salt ▪ A pinch of ground black pepper ▪ A pinch of cumin ▪ 3 cloves garlic ▪ A pinch of cayenne pepper ▪ sprinkle of paprika Method Roughly chop the courgettes and peel the garlic.Place all the ingredients in a food blender or food processor and blitz all ingredients in a until a smooth consistency is reached.
