A gorgeous recipe by one of our favourite chefs from one of our favourite (if not the favourite!) restaurants ever… Courgette Hummus by Anita of La-Petite Bouchée! We absolutely love it there, incredible food, great setting, we cannot recommend enough. In their own words: “We serve simple yet hugely flavoursome, French cuisine using only the finest ingredients from Devon’s bountiful larder.”… What’s not to love?!
Anyways, on with the recipe! We’ve given it a blast and it did not disappoint 🙂
Ingredients
▪ 3 medium courgettes, roughly chopped
▪ 60 ml extra virgin olive oil
▪ 120 ml lemon juice
▪ 120 ml tahini
▪ A large pinch of sea salt
▪ A pinch of ground black pepper
▪ A pinch of cumin
▪ 3 cloves garlic
▪ A pinch of cayenne pepper
▪ sprinkle of paprika
Method
Roughly chop the courgettes and peel the garlic.Place all the ingredients in a food blender or food processor and blitz all ingredients in a until a smooth consistency is reached. Taste and adjust flavours to taste.Serve with crunchy toast or with a selection of vegetable cruditée.
