Heat a wok on high and add the sunflower oil. Throw in the red onion and garlic (freshly grated ginger also works well, if you have it.) Stir fry for a minute, or so, before reducing the heat. Make sure the onion and garlic doesn’t brown.
Then add the rest of the veg. Toss the ingredients around the wok, making sure they keep moving and it doesn’t get too overcrowded.
Once the veg has been cooking for a good 6 mins, flavour with a tablespoon of water, the hoisin and soy sauce. Cook for a further two mins, but watch out for the veg becoming too soft.
Serve with some rice or noodles. It’s as simple as that!

Ingredients
2 tbsp sunflower oil
1/2 red onion, finely sliced

A handful of mange tout
A handful of baby corn, halved
A handful of beansprouts
1 carrot, cut into match sticks
