Frittata is an egg-based Italian dish similar to an omelette or crustless quiche. It is enriched with additional ingredients such as meats, cheeses, vegetables or pasta. A frittata is really simple to make and is a great way to use up extra vegetables and tastes delicious hot or cold. You can add as little or as you like with the same great results! This recipe has been written for Veg In A Box by Latoyah from Sugar Pink Food You will need:- 1 small onion, finely diced 4 cherry tomatoes, sliced (or normal tomatoes) 6 mushrooms, sliced 1 red, sliced 6 eggs Salt & pepper to taste Handful of macaroni, cooked Sprinkle chilli flakes 2 cloves of garlic Cheese for topping Method:- Pre heat oven to 190 degrees/gas mark 5. Add some oil to a frying pan Add the onions, peppers and mushrooms and fry off. Add the rest if the veg and fry for 2 minutes. In a measuring jug, whisk together eggs, garlic, chilli flakes, salt and pepper. Spray some cooking oil around your quiche/pie dish and add veg and cooked macaroni. Add the egg mixture and mix everything around to make it even. Lay the slices of cherry tomatoes/tomatoes on top and top with cheese. Put in oven for 25 mins or until egg is baked, firm and golden, then enjoy!
