First I peel cook and mash a mountain of potatoes.
In a frying pan, I stir fry:
Lardons
Onion (2)
Spring onions
Kale
Tenderstem Broccoli
Half a cabbage
Cooked the veg for a few minutes then I poured it on to the mash and added a knob of butter garlic and salt and pepper and grated mature cheese and mix well.
Next pour the mixture in to a casserole dish.
Then top with sliced tomatoes and then top with grated cheese and then I crush up ready salted crisps two packs and sprinkle over the cheese to give it a Crunchy topping, I like to use Crisps 🙂
Then bake for 45 mins, easy!
Sausage Ball & Tomato Pasta Stew
This one involves tomatoes, onions, kale and lots of fresh herbs.
I panfried some Pork Sausage Balls added some chopped onion, lots and lots of tomatoes and celery followed by lots of herbs and kale. Then added some pasata and a paprika stock cube. I then added a few dashes of Worcestershire Sauce and a pot of ricotta then eft it to simmer with the lid on for half hour. Finally I added some whole wheat pasta and a tin of organic black beans. Will serve over creamy mash later on.
